As the dining rooms are closed to the public, the demand for food trucks has increased.
Quinn Betts, co-owner of Cousins Maine Lobster in Smyrna, receives a lot of calls from people trying to book a neighborhood.
“We’re trying the best we can to get trucks lined up. Any community looking to book a truck is best placed to call,” said Betts, whose husband is the vice president of the Nashville Food Truck Association.
Betts said many operations operate skeleton crews but add the extra time it takes to keep customers and employees safe.
“We all work with one hand behind our backs. There are wrinkles that need to be ironed out. This is the new way,” said Betts.

“We don’t want our employees to literally open the window and hand out food. We don’t want money to flow back and forth,” said Betts.
But as a nurse, Betts said she survived standing on the front lines of other epidemics.
“It’s a scary time. But that’s nothing to play around with,” said Betts, who ordered medical-grade detergents. “I don’t want to endanger anyone.”
